Q:Why does the chocolate coating turn grey, bloom, or lose its gloss?
A:
A grey or dull coating (fat bloom) is usually a sign of improper tempering. Unstable cocoa butter crystallization leads to poor gloss and a whitish appearance. Solution: Verify that the temperature control profile of the coating machine matches the tempering requirements of the chocolate type being used. Also, check that the temperature and airflow in the cooling tunnel are appropriate.
