Blast chillers and freezers can serve rapid-cooling or freezing workflows for meat, vegetables, fruit, gelato, ice cream, sundaes, and frozen yogurt. Start equipment selection with the product form, batch loading method, and target process.

Blast chilling takes the product to a chilled process endpoint, while blast freezing continues to a frozen endpoint. Both workflows should focus on product core temperature, not only cabinet air temperature.

Use the real batch mass, pan format, product thickness, inlet temperature, and target core temperature. Pan count or cabinet volume describes loading structure but does not by itself represent actual processing capacity.

Cycle time changes with inlet temperature, product density and thickness, loading pattern, and target core temperature. Test the target product with the real pan arrangement to establish a meaningful cycle baseline.

Cabinet temperature describes the cooling environment inside the equipment, while product core temperature is the internal product condition measured by a probe. Probe position and product thickness affect the reading, so product core temperature should be considered when judging the process endpoint.
